Sausage, Apple and Sage Dressing

 

This classic Thanksgiving side dish can be made at any time of year. (I even have a friend who has it for her birthday every year.)  I like this version because it includes both a salty and sweet element.
Ingredients:
2 french baguettes, stale, cut into 1-inch cubes. (I recommend leaving it out over night, or put in a 250 degree oven for an hour.)
1 tablespoon vegetable oil
1 pound sausage
1 large onion, diced
5 stalks celery, diced
2 medium granny smith apples, peeled and diced
15 sprigs Italian parsley leaves, chopped
10 fresh sage leaves, chopped
4 eggs
2 cups turkey or chicken stock
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
Directions:
Heat the oil in a large skillet. Add sausage, break it up, and brown. Remove meat with slotted spoon.
 
Add onions and celery to the pan.  After 1 minute, add the apples. Cook 2 more minutes.  Place vegetables in a large bowl with the cooked sausage.
 
 

 

Add bread cubes, parsley, and sage to the bowl.
 
In a small bowl, mix the eggs, stock, salt, and pepper. Pour this into the large sausage/bread mixture, gently tossing.
Spread mixture into 13×9 baking dish. Dot with butter.
Bake at 350 degrees for 50 minutes to 1 hour.  Top should have a golden brown crust when done.
Serve warm.
