For this year’s Super Bowl, I wanted to make a themed dish to try to cheer for the Los Angeles Rams (and although they sadly loss, and the game was a total snooze-fest, this dish was super popular!) I thought this lamb appetizer would be a perfect “ram” dish, (and I was finally able to use my Ras El Hanout seasoning from Savory Spice Shop (which I love that it’s a local shop here in Charlotte, but you can also order online.)

(I got super lucky that I stumbled upon this super cute Rams cookie at Reid’s the night before.)

The added bonus is that the dish is pretty simple to make, and full of flavor!

Ingredients

  • 1 package of hummus, original flavor
  • 2 tablespoons olive oil, divided
  • 1/2 pound ground lamb (or beef)
  • 1 tablespoon  Ras el Hanout
  • 1 tablespoon pine nuts
  • fresh parsley or chives to serve

Instructions

  • Spread hummus in a thin layer on a large platter.
  • Add 1 tablespoon olive oil to skillet, and toast pine nuts. Set aside.
  • Add remaining olive oil and then add lamb to the pan. Brown and break up into small pieces.
  • After about 5 minutes, when the lamb is still partially cooked, stir in the Ras el Hanout & salt. Continue cooking until lamb is fully cooked through, about 10 minutes.
  • Remove pan from the heat and stir in the pine nuts. Adjust seasoning.
  • Spoon warm lamb and pine nut mixture over the hummus and sprinkle with fresh parsley or chives. Serve with pita chips or warmed pitas.
