Are you like me and (a) never want summer to end, and (b) love the combination of savory and sweet? If so, this is going to make you happy! We made this for a last cookout of the summer for a party at our house, and ate off it for the next week too. The acid of the lime juice, plus the feta and basil really contrasts the sweet watermelon. (Plus, watermelon is my boyfriend’s favorite fruit, so we almost always have it on hand.)

Plus, when you look at the steps below, it’s super easy to make!

Ingredients:

8 cups cubed watermelon
1/4 cup extra virgin olive oil
1/8 cup lime juice
1 1/2 tsp salt
1 cup fresh basil leaves, chopped
1 1/2 cups crumbled feta cheese

Directions:

In a small bowl, whisk together olive oil, fresh lime juice, and salt.

Place watermelon in a large salad bowl. Pour dressing, chopped basil, and crumbled feta over the watermelon and toss gently to coat.

Serve chilled.
