I love when fig season rolls around! The fruit is unique in texture and flavor, and it pairs so well with salty treats. I stumbled upon them at Trader Joe’s the other day, and then just walked around to grab other fun ingredients that pair well: prosciutto, thyme, bread, and cheese! I quickly put this together for the ladies, and needless to say, there were none leftover!

(note: the girls said the Maldon salt really make that bite pop, so I would try to make sure you use it, but it is optional!)

Ingredients:

French baguette
1 package of Boursin Cheese (also can use goat cheese)
5 oz package prosciutto
6-8 figs, thinly sliced
Fresh Thyme sprigs, leaves removed
Olive oil
Salt (Maldon Flake salt if available)

Directions:

Slice baguette into 1/2 inch slice. Brush both sides with olive oil, season lightly with salt and place on a foil lined baking sheet. Bake at 350 degrees for 20 minutes, flipping halfway and adding more oil and salt. (I sometimes cheat and use the spray olive oil.) Cool.

Spread a thin layer of boursin cheese on each piece.

Place a 1/2-1/3 piece of prosciutto on top of the cheese.

Top with a slice of fig.

Season with Flake salt & fresh thyme leaves.

Serve at room temperature, and enjoy!
